Boerewors is an Afrikaans compound word: boere (farmers) + wors (sausage), from Dutch worst. Boere refers to the Afrikaner farmers who settled in South Africa from the 1600s onward. Wors is the sausage they made and cooked. Boerewors, then, is simply 'farmer's sausage'—rough, hearty, made to last.

The sausage itself is traditional: coarsely ground beef, spices (coriander seed primarily), garlic, salt. It is stuffed into casings and coiled. The coil is the signature shape—you recognize boerewors by its spiral form. It is grilled slowly over hot coals at every braai (South African barbecue). The slow cooking makes the outside crispy while keeping the interior juicy.

In 1999, South Africa granted boerewors legal protection. The South African Bureau of Standards (SABS) established strict standards: boerewors must contain a minimum of 90 percent meat, and specific spices must be present. No filler. No corn syrup.
