Choripán is a portmanteau: chorizo (spiced fresh sausage) plus pan (bread). Both words entered Spanish from Latin roots and traveled to the Río de la Plata with 16th-century colonizers. The combination, however, is distinctly Argentine: a fresh pork sausage split, grilled, and laid in a crusty roll with chimichurri or salsa criolla.

The word chorizo derives from the Iberian tradition of salted and spiced pork sausages, linked ultimately to Latin salsus, meaning salted. Spanish settlers brought pigs to the Río de la Plata in the 1580s under Juan de Garay, who founded Buenos Aires in 1580. By the 1970s, choripán was inseparable from Argentine public life. Politicians from Perón onward deployed it as a symbol of solidarity with working people, and the phrase acto con choripán came to describe any political event where free food was offered to attract crowds. Today the word is contested but beloved, claimed by all sides of Argentine politics while remaining what it always was: a sausage in a roll, served at a grill on the sidewalk.
