Rolled sushi gets its name from a verb that means to wrap, wind, or coil.

The verb maku (巻く) in Japanese means to roll, wind, coil, or wrap. From this verb comes maki (巻き), the rolled or wrapped form, and makizushi is simply rolled sushi: rice and fillings wrapped in nori seaweed and sliced into rounds. The voiced zushi in place of sushi is an instance of rendaku, the Japanese phonological rule by which the first consonant of a second element softens when two words combine. This same process turns kawa (river) into -gawa in compound place names.

Sushi itself has an older and more complex etymology. The earliest form of Japanese sushi, narezushi, was a preservation technique: fish were packed in salted rice and left to ferment for months or years, a method documented in Chinese texts from the second century BCE and known in Japan by the eighth century CE. The character 酸 (su), meaning sour or vinegary, describes the taste that fermentation produced. Over time the fermentation step was abbreviated and eventually abandoned in Edo-period Tokyo, with vinegar added directly to cooked rice to simulate the original sour flavor.

Makizushi as a distinct form crystallized in Osaka and Edo during the eighteenth century, when nori production along the shores of Edo Bay became commercially viable. The thin maki roll (hosomaki, with a single filling) and the thick roll (futomaki, with multiple ingredients) are both documented in Edo-period cookbooks of the 1780s. In Edo, street vendors sold maki from stalls near Kabuki theaters, making it among the earliest Japanese fast foods available to the urban poor. Kitagawa Morisada's illustrated miscellany Morisada Manko, written between 1837 and 1853, describes several maki varieties by shape and filling.

Makizushi arrived in the United States in stages. Japanese immigrants in Hawaii and California made it for family gatherings from the early twentieth century, but it entered mainstream American dining through Japanese restaurants in Los Angeles and New York in the 1960s. The California roll, invented in the 1970s, substituted avocado and crab for raw fish and put rice on the outside. By the 1990s, makizushi was available in supermarkets across North America, and maki roll had entered everyday English.

Makizushi has become one of the most recognized Japanese foods worldwide, which is somewhat ironic given that the form is a relatively late development in the long history of sushi preparation. The California roll, which reversed the original inside-out structure by putting nori inside and rice outside, became more popular in North America than the original Japanese form.
