The town of Soave sits behind medieval walls in the Veneto hills east of Verona, and its name carries the full weight of Latin suavis: sweet, agreeable, pleasing to the senses. The Romans used suavis to describe music, perfumes, and people whose company one sought out. By the time the word had traveled into Italian as soave, it had shed nothing of that warmth. The Soave wine zone was officially delimited by the Italian government in 1931, though winemakers in the Garganega-planted hills had been selling wine under that name for centuries. The Italian soave stayed closer to the original Latin sense of pleasantness untainted by slickness. Both words trace back to the Proto-Indo-European root swad-, which also gave Greek hedys (sweet) and Sanskrit svadu. English inherited the same root through sweet, though the connection is not immediately obvious.
Today soave on an English wine list signals a white wine from the Veneto, almost always built around Garganega grapes, with a characteristic almond finish. The word has done something rare: it moved from abstract adjective to geographic label without losing its meaning. When a wine writer calls a Soave soave, the joke is deliberate and accurate.
