Louis XIV called it 'the wine of kings, the king of wines.' Peter the Great of Russia stationed troops in the Tokaj region specifically to secure a supply. The wine that prompted both descriptions takes its name from a small town in northeastern Hungary — and the word that names it is among the oldest geographically designated wine names in the world.

Tokaji is the Hungarian adjective meaning 'of Tokaj' — from the town of Tokaj, now Tokaj, Hungary, in the northeastern corner of the country where the Bodrog and Tisza rivers meet. Tokaji Aszú, the wine the name most precisely refers to, is a sweet wine made from grapes affected by Botrytis cinerea, the 'noble rot' fungus that dehydrates the grape berries while concentrating their sugars and adding characteristic honeyed complexity. The Aszú process — collecting individually selected botrytized berries (aszú meaning 'dried, shriveled' in Hungarian) into a paste that is then added to a base wine and measured in units called puttonyos (hods, baskets) — was documented by a winemaker named Máté Laczkó Szepsi around 1631, making it one of the earliest recorded methods for producing a botrytis-affected sweet wine. The French Sauternes tradition developed independently later in the seventeenth century.

The wine's reputation spread through the Habsburg court and from there to every royal table in Europe. Louis XIV's famous description — 'Vinum regum, rex vinorum' (wine of kings, king of wines) — is attributed to him on the occasion of receiving a gift of Tokaji from the Polish king around 1703, though the exact circumstances are disputed. Peter the Great of Russia was a documented admirer who is said to have maintained a permanent Cossack detachment in the Tokaj region to ensure a regular supply to the Imperial court in St. Petersburg. Pope Benedict XIV received Tokaji as a gift and wrote enthusiastically about it. Voltaire mentioned it in correspondence. The wine moved through the aristocratic networks of Europe as a diplomatic currency — expensive, distinctive, a taste that could not be replicated elsewhere.

The Tokaj wine region was formally delimited by decree of the Hungarian Diet in 1737, making it one of the world's first legally defined wine appellations — predating the Douro valley's demarcation for Port (1756) and long predating the French appellation system. This legal status established the geographic principle that Tokaji referred not just to a style of wine but to wine from a specific place, made in a specific way. The region survived the Ottoman occupation of Hungary (which had disrupted viticulture elsewhere), the Habsburg takeover, the disruptions of both world wars, and Soviet collectivization — though the last did serious damage to wine quality by prioritizing quantity over the painstaking individual-berry selection the aszú process requires.

After 1989 and the fall of Communism, foreign investment poured into the Tokaj region — notably from French and Spanish wine producers — and the wines returned to international quality standards. The word tokaji entered English and other European languages as a wine term in the seventeenth and eighteenth centuries, sometimes spelled tokay (an earlier anglicization), and sometimes used loosely for sweet wines of similar style made elsewhere. In modern English, tokaji with the lowercase j refers specifically to wine from the Hungarian region; Tokaji capitalized is the geographic designation. The distinction between tokay (the looser historical anglicization) and tokaji (the precise geographic form) matters to wine writers and to the European Union, which protects the denomination.
