“A breakfast strip fried as political revenge in twelfth-century Hangzhou.”
In 1142, the Song Dynasty general Yue Fei was imprisoned on fabricated treason charges and executed at the order of chief minister Qin Hui in Hangzhou. Street vendors responded by frying two strips of dough twisted together to represent Qin Hui and his wife Wang shi being burned in punishment. They called the item 油炸鬼 (yóuzhá guǐ), oil-fried ghost, with the ghost being Qin Hui himself. The name was deliberate public mockery, a popular verdict delivered hot at morning markets.
The character 條 (tiáo, strip) gradually displaced the word for ghost as the food spread north across Song and Ming Dynasty China. Tang Dynasty records mention fried dough sold in urban markets, but the double-strip form consolidated during the Song period, when Hangzhou's population exceeded one million and created the dense street-food culture that gave youtiao its shape. The oil in early recipes was lard or sesame oil, which gave the strips a richer flavor than the soybean oil common today.
Youtiao followed Hokkien and Cantonese migrants into Southeast Asia during the nineteenth century. In Malaysia and Singapore it kept the old Hokkien name yóuzhá guǐ, preserving the insult in communities that had long forgotten its target. Teochew communities in Bangkok call it pa tong ko and serve it split with kaya jam, a coconut-egg spread, showing how the same strip transforms under different hands.
The Pinyin romanization system, formalized in 1958, standardized the Mandarin pronunciation as yóutiáo, and that spelling became the international form. Taiwanese cafés and mainland chain restaurants now sell youtiao as far north as Tokyo and as far west as London's Chinatown. The strips are still sold in pairs everywhere they appear, preserving the original insult as an unconscious daily ritual.

Youtiao is China's default breakfast bread: two strips of leavened wheat dough deep-fried until hollow and crisp, pulled apart and dipped in doujiang or wrapped in rice paper. The form has been continuous since the Song Dynasty, and a vendor in modern Chengdu uses essentially the same technique as one in twelfth-century Hangzhou.
What survives in the paired shape is a memory most eaters no longer carry. The double strip encoded a political anger that outlasted the dynasty, the minister, and the grievance itself. Every morning, across a billion breakfasts, the ghost of Qin Hui is fried again.
