Latin vapor meant steam, vapor, or exhalation — the mist that rises from hot water, the breath that is visible on a cold day, the emanations from warm ground. Evaporare was to emit as vapor, to steam away, to turn from liquid to gas. Evaporatio was the process itself: the transformation of liquid water into vapor through heat.
The water cycle — evaporation, condensation, precipitation, runoff — was described in outline by ancient philosophers. Aristotle discussed the cycle in his Meteorologica (c. 340 BCE): the sun's heat evaporates water from the seas and rivers, the vapor rises, it condenses in the upper air, it falls as rain. The analysis was qualitatively correct if mechanistically incomplete.
The quantitative understanding of evaporation developed in the 18th and 19th centuries. Guillaume Amontons in the early 18th century began systematic measurement of vapor pressure; John Dalton in the 1800s established the law of partial pressures; the kinetic theory of gases in the mid-19th century explained evaporation as the escape of fast-moving molecules from a liquid surface.
Evapotranspiration — the combined loss of water from soil (evaporation) and plants (transpiration) — is one of the key variables in hydrology and agriculture. How much water leaves the land surface determines how much remains for crops and rivers. In a warming world, increased evaporation is changing water availability in every climate zone.
