Metate enters English through Spanish, from Nahuatl metatl (grinding stone). The metate is a large, flat or slightly concave stone used as a grinding platform. A cylindrical stone (mano, from Spanish 'hand') is rolled back and forth across the metate to grind corn, chili, cacao, and other ingredients. The technology is at least seven thousand years old in Mesoamerica — archaeological examples from the Tehuacán Valley in Mexico date to approximately 5000 BCE.
The metate is the tool that made corn agriculture possible. Raw corn kernels are too hard to eat. Ground on a metate and mixed with lime-treated water (nixtamalization), they become masa — the dough from which tortillas, tamales, and dozens of other foods are made. The metate is not an accessory to corn culture. It is the technology that enables it.
In pre-Columbian Mesoamerica, the metate was a woman's tool. Grinding corn was women's work — hours of daily labor, kneeling before the metate, rolling the mano. Archaeological studies of skeletal remains show that women in corn-dependent cultures had distinctive wear patterns on their knees, arms, and shoulders from years of grinding. The metate shaped their bodies.
Electric mills and industrial masa production have largely replaced the metate in urban Mexico and Central America. But in rural communities, metates are still used. In Oaxaca, some cooks insist that metate-ground chocolate and mole taste different from machine-ground versions — the rough stone produces a texture that steel cannot. The seven-thousand-year-old technology produces a flavor that the machine cannot match.
